Simple Cheesy Pizza 

Ingredients:

- 200g strong bread flour

- 5g salt

- 7g dried yeast

- 50-100ml warm water 

- 2tsp olive oil 

- Mozzarella / cheese of choice (amount varying depending how cheesy you want your pizza) 

- 1tsp garlic paste 

- 2tsp dried oregano 

- 500ml passata 

- Pinch of sugar 

- Chilli flakes (optional) 

Method

The Dough:

To begin take the 200g of flour, the 7g of yeast and place it in a 50ml bowl of warm water. Mix this into a dough and knead for approximately 10 minutes. Add the 5g of salt around the five minute mark. 

Place the kneaded dough into a separate bowl containing 1tsp of olive oil and leave to prove until it has doubled in size. 

The Pizza Sauce: 

Line your pan with olive oil and fry the garlic paste at a medium heat for a couple of minutes. Add in the passata and fry for two more minutes before adding the oregano. Fry this new mixture until it has reduced to around half. Add a pinch of sugar and simmer for a couple more minutes. 

The Pizza: 

Roll out your freshly prepared dough into either 10" or 12" and top with the sauce. Cover the sauce with as much cheese as you like (and any other toppings) then bake at 200* for 8-10 minutes until crisp and golden. If you're feeling dangerous add chilli flakes for an extra kick.
